In short: Work backwards from the deadline, not forwards from the oven. A 16 lb unstuffed turkey needs roughly 3 h 38 min of roasting plus a 30–45 minute rest — and, crucially, 3–4 days of refrigerator thawing before any of that. The thaw is the step that ruins Thanksgiving, because it is the only one you cannot compress on the day. Stuffing the bird adds time and brings its own 165°F requirement.

It also evens out the temperature between the outer inch and the middle. A bird that size will still be well above serving temperature an hour later, so there is no risk of it going cold.
Should I stuff my turkey?
The USDA advice is not to, for optimum safety. Stuffing sits at the centre, insulated on all sides, so it is the last thing to heat, and it must itself reach 165°F because it has been in contact with raw poultry juices. Getting it there usually overcooks the breast. Bake the dressing separately: it is safer, it develops a much better crust, and the cavity is then free for aromatics.
Can I thaw a turkey in cold water?
Yes, and it is roughly ten times faster than the refrigerator — about 30 minutes per pound, so 8 hours for a 16 lb bird. The turkey must be in leakproof wrapping, fully submerged, and the water has to be changed every 30 minutes to keep it cold. A bird thawed this way must be cooked immediately and must not be refrozen or returned to the fridge for later.
Why does minutes per pound change with turkey size?
Because cooking time follows mass to the two-thirds power, not the first. Heat enters through the surface but has to warm the volume, so larger birds need proportionally less time per pound. That is exactly why the traditional advice splits into 20 minutes per pound for small birds and 15 for large ones — two points on one curve, described as though they were two rules.
Should I pull the turkey before it reaches 165°F?

An hour that you have not allocated to anything. Turkeys finish early more often than late, especially if the bird went in warmer than fridge temperature, and an early bird is a non-problem — rested and tented it will hold comfortably. A bird still at 150°F when everyone sits down is a real one. That asymmetry is the entire argument for the buffer.
