What this result does not account for

In short: Take the roast out before it reaches your target. A roast keeps cooking on the counter, gaining 5–7°F on a small joint and 10–15°F on a large one, so aiming for 135°F medium-rare means pulling at about 128°F. This is also why the USDA’s 145°F plus a three-minute rest works: the rest is not a garnish, it is part of the lethality step.

Worked Example
- Choose the cut and weigh it. Both the rate and the carryover depend on it.
- Pick your doneness target. Below 145°F is a preference, not a recommendation.
- Subtract the carryover. That gives the temperature to pull at.
- Probe the thickest part, away from bone. Bone reads high and is the usual cause of an undercooked joint.
- Rest, tented loosely. The temperature evens out and the juices are reabsorbed.
A 5 lb bone-in rib roast for medium rare: the target is 135°F, the joint will gain about 8°F resting, so pull it at 127°F. Roasting at 325°F takes roughly 2 hours 10 minutes. Leave it in until the thermometer reads 135°F and it will finish nearer 143°F — medium, not medium rare, and past the point of recovery.

What is carryover cooking?
The rise in internal temperature after meat leaves the oven. The outside of a roast is far hotter than the middle, and that heat keeps flowing inwards until everything equalises. It amounts to 2 to 4°F on a chop, 5 to 7°F on a small roast and 10 to 15°F on a large one. It is the reason a roast must come out of the oven before it reaches the temperature you actually want.
What temperature do I pull a roast at for medium rare?
Around 128 to 130°F for a target of 135°F on a typical small to medium joint, and as low as 125°F on a large roast that will carry over more. The rule is simply target minus carryover, and carryover scales with size, so a recipe quoting a single pull figure without mentioning the weight is giving you half the instruction.
Why does the USDA say 145°F with a three-minute rest?
Because the rest is part of the process, not an afterthought. Pathogen reduction depends on both temperature and time at that temperature, and during those three minutes the meat holds or continues to rise through carryover. The combination of 145°F and three minutes achieves the same lethality as a higher instantaneous temperature would, which is why the figure is lower than many people expect.
Does searing seal in the juices?
No. That idea has been disproved by direct measurement, and a seared roast typically loses slightly more moisture than an unseared one. What searing genuinely does is create flavour through the Maillard reaction, which gets going in earnest around 285°F and generates hundreds of aromatic compounds. Sear for crust and flavour, on a dry surface, and do not expect it to affect juiciness.
How long should a roast rest?
Fifteen to twenty minutes for a joint up to about 5 lb, and thirty to forty-five for anything much larger. Resting lets the contracted fibres relax and reabsorb the liquid they pushed towards the centre, and lets the temperature even out. Tent loosely with foil rather than wrapping tightly, which traps steam and softens whatever crust you built.
Should I roast at a high or a low temperature?
It depends what you want. A hot oven browns fast and builds crust but creates a wide gradient, so there is a thick band of overcooked meat under the surface. A cool oven is slower and browns less but gives even colour from edge to centre. The reverse sear exists precisely to get both: cook low until nearly done, then blast the outside briefly at the end.
Where should I put the meat thermometer?
In the thickest part, pushed to the centre then withdrawn very slightly, well away from bone and from large pockets of fat. Bone conducts heat differently and a probe touching it reads high, which is the commonest way people serve an undercooked bone-in roast. On an irregular joint take several readings and trust the lowest.
Is it safe to eat beef cooked to 135°F?
It is below the USDA minimum of 145°F, so it is a preference rather than a recommendation. The risk on whole muscle is lower than on ground meat because bacteria remain on the surface, which searing addresses, and the interior of an intact cut is essentially sterile. That said, anyone cooking for young children, older adults, pregnant women or anyone immunocompromised should observe the 145°F figure.
Why is pulled pork cooked to 203°F?
Because it is not being cooked to a doneness level, it is being cooked until the connective tissue breaks down. Collagen only renders into gelatin properly in the region of 195 to 205°F, held for some time, and that gelatin is what makes the meat succulent and lets it pull apart. Below about 190°F a shoulder is safe to eat but tough, which is why it is the one cut where far past done is exactly right.
Does a roast cook faster if I let it come to room temperature first?
Slightly, perhaps five to ten percent, and more usefully it cooks a little more evenly because the centre starts closer to the surface temperature. The effect is smaller than most people assume, since a large joint left out for an hour warms only its outer layer. Do not leave raw meat above 40°F for more than two hours, and treat tempering as a small refinement rather than a necessity.
