What this result does not account for

- Published references disagree — King Arthur says 120 g per cup of all-purpose flour, America's Test Kitchen 142 — because they assume different filling methods.
- Chopped and grated ingredients vary with piece size in ways no single figure captures.
- Brown sugar's figure assumes it is packed firmly, as the chart specifies.
In short: A fluid ounce is 29.5735 ml of space; an ounce is 28.3495 g of mass. They share a name and nothing else. They coincide only for water, and even then not exactly — 8 fl oz of water weighs 8.35 oz. A cup of flour is 8 fluid ounces of volume but only about 4.25 ounces of weight, which is where the “1 cup = 8 oz” error comes from.

Worked Example
- Identify what you are measuring. Density is the bridge between volume and weight, and it is different for every ingredient. Without it the conversion cannot be done at all.
- Convert the input to a common base. Volume units go to millilitres, weight units go to grams.
- Cross the bridge. Grams = millilitres × density, or millilitres = grams ÷ density.
- Check which ounce you meant. Fluid ounces measure space and weight ounces measure mass. For water they are within 4.3% of each other; for honey they are not close at all.
- Prefer the weight. Whichever direction you converted, the gram figure is the one that does not depend on how a cup was filled.
One cup of all-purpose flour: 236.59 ml × 0.5072 g/ml = 120 g. In the two kinds of ounce that is 8 fluid ounces of volume and 4.23 ounces of weight — the same cup of the same flour, described by two measurements that differ by nearly a factor of two. A cup of honey, by contrast, is the same 8 fluid ounces but 340 g, which is 11.99 weight ounces.

Density is derived from the ingredient's grams-per-US-cup figure divided by 236.5882365 ml rather than stored separately, so the two figures cannot drift apart. Gram weights are the King Arthur Baking spoon-and-level chart. Both US fluid ounces (29.5735 ml) and avoirdupois ounces (28.349523125 g, NIST SP 1038) are reported for the same quantity so the distinction between them is visible rather than asserted, and the imperial fluid ounce (28.4130625 ml) is given alongside. Ingredients are flagged for method sensitivity: compactible powders carry a note that the figure assumes spoon-and-level measurement, while liquids and solid fats do not, because they cannot be packed.
Computation runs in IEEE-754 double precision at full internal precision; rounding to two decimal places occurs strictly at the display layer, so no cumulative drift enters the result. All monetary outputs use accounting presentation — grouped thousands, two decimals, negatives in parentheses — so figures can be transcribed directly into a model or working paper. Division-by-zero and out-of-domain inputs return an em-dash rather than a misleading number.

What is the difference between fluid ounces and ounces?

Is 1 cup 8 ounces?

Does 1 fluid ounce of water weigh 1 ounce?
Almost, but not exactly. One US fluid ounce of water is 29.5735 ml and weighs 29.5735 g, which is 1.043 avoirdupois ounces. So 8 fl oz of water weighs about 8.35 oz. The near-match is precisely why the two units get confused, and the 4.3% gap is why the confusion causes errors.
Are US and UK fluid ounces the same?
No. A US fluid ounce is 29.5735 ml and an imperial fluid ounce is 28.4131 ml, so the US measure is 4.08% larger. It gets worse at pint scale, because an imperial pint is 20 imperial fluid ounces while a US pint is 16 US fluid ounces — 568 ml against 473.
How many grams is a cup of flour?
About 120 g for all-purpose flour measured spoon-and-level, which is the King Arthur reference this calculator uses. The figure depends heavily on technique: scooping straight from the bag gives about 160 g, and sifting first gives about 110. That range is wider than the difference between most flour types.
Why do different websites give different gram weights for a cup?
Mostly because they assume different filling methods. King Arthur lists all-purpose flour at 120 g per cup on a spoon-and-level basis, while America's Test Kitchen publishes 142 g, closer to a scooped cup. Neither is wrong; they describe different actions. The practical answer is to pick one reference and use it consistently.
Can I convert grams to millilitres directly?
Only if you know the density. Grams and millilitres are equal for water by definition, and for nothing else. Oil is 0.92 g/ml so 100 g is 109 ml, and honey is about 1.44 g/ml so 100 g is only 70 ml. The two units coincide for water and diverge for everything else.
Is a cup of kosher salt the same as a cup of table salt?
Not remotely. Table salt is about 292 g per cup and kosher salt about 145 — a factor of two, because kosher salt's larger flakes leave much more air in the cup. Swapping them by volume either doubles or halves the salt in the dish, which is one of the most common seasoning errors in home cooking.
Should I measure by weight or volume?
By weight whenever a scale is available. A gram is a gram regardless of how the ingredient was scooped, packed, sifted or stored, while a cup varies by a third for flour depending only on technique. Weight also makes scaling and baker's percentages possible, neither of which works reliably from volume.
