What this result does not account for
- Relative sweetness values are sensory averages and shift with concentration, temperature and the rest of the recipe.
- Matching sweetness does not match texture, browning, moisture retention or shelf life, and the calculator cannot predict those quantitatively.
- Cup weights assume standard measuring technique and, for brown sugar, firm packing.
- Sugar alcohols and high-intensity sweeteners are not modelled beyond allulose; most require a bulking agent to work at all.
- Candy work, ice cream and preserving depend on crystallisation, freezing-point depression and water activity thresholds that are outside this tool.
In short: Matching sweetness almost never matches mass. To replace 100 g of table sugar you need only 58.8 g of fructose but 133 g of glucose and 143 g of allulose. Every other job sugar performs — tenderising, holding moisture, spreading a cookie, browning a crust, whipping air into butter — follows the weight you put in, not the sweetness. That gap is why reduced-sugar bakes go wrong.

Worked Example
- Match the sweetness. Multiply by the ratio of the two relative sweetness values. That gives the weight that tastes the same.
- Check what the mass did. If the substitute weight differs from the original, bulk has been added or removed, and bulk is what does the structural work.
- Look at the sugar-to-flour ratio. Above about 70% of flour weight, sugar is load bearing. Below 40% it is mostly flavour and a swap is comparatively safe.
- Decide whether creaming still works. If the recipe creams butter and sugar, a fine or liquid sweetener removes that leavening entirely.
- Adjust the oven for browning. Reducing sugars brown earlier. Dropping the temperature about 25°F is the standard correction.
Replacing 200 g of table sugar with allulose needs 286 g to taste equally sweet, which sounds like a straightforward swap until you notice you have just added 86 g of material to the bowl. Replacing it with fructose needs only 118 g — and now 82 g of bulk has disappeared instead. Same sweetness in both directions, two opposite structural problems, and neither is visible in a recipe that lists sugar by volume.

Substitute weights are computed as the original weight multiplied by the ratio of relative sweetness values, with sucrose fixed at 1.00 as the reference. The values used are fructose 1.70, honey 1.10, sucrose and superfine and confectioners’ sugar 1.00, brown sugar 0.98, glucose 0.75, allulose 0.70 and lactose 0.16; these are the conventional sensory figures and are averages rather than physical constants, because perceived sweetness varies with concentration, temperature and the rest of the formulation. Cup weights are the King Arthur Ingredient Weight Chart figures: granulated 198 g, superfine 190 g, packed brown 213 g and confectioners’ 113 g. The sugar-to-flour ratio is expressed as a percentage of flour weight in the baker's-percentage convention, and the bands used to interpret it follow standard formulation practice, with high-ratio defined as sugar equalling or exceeding flour. The functional material — tenderising through water competition, hygroscopic moisture retention, creaming aeration, spread control and the two browning reactions — follows published baking science; the caramelisation onset of 160°C for sucrose and the Maillard onset of roughly 140°C are the standard figures. The 25% ceiling on unaided sugar reduction is the commercial bakery rule of thumb, not a hard physical limit.
Computation runs in IEEE-754 double precision at full internal precision; rounding to two decimal places occurs strictly at the display layer, so no cumulative drift enters the result. All monetary outputs use accounting presentation — grouped thousands, two decimals, negatives in parentheses — so figures can be transcribed directly into a model or working paper. Division-by-zero and out-of-domain inputs return an em-dash rather than a misleading number.

Can I just swap one sugar for another one to one?
By weight it works between granulated, superfine and brown sugar, which are all close to equally sweet. It does not work for anything else. Fructose is 1.7 times as sweet, so you need 41% less of it; glucose is 0.75, so you need a third more; allulose is 0.70, so you need 43% more. And in every one of those cases the change in mass changes the texture even though the sweetness matches.
Why can't I just use less sugar to make something less sweet?
Because sugar is doing five other jobs that all scale with weight. It tenderises by competing with flour for water, holds moisture and slows staling, cuts air into butter during creaming, controls how far a cookie spreads, and drives browning. Take out a third of the sugar and you take out a third of all of that too. Up to about 25% you usually get away with it; beyond that you need to replace the bulk.
Is brown sugar sweeter than white sugar?
Very slightly less sweet, because light brown sugar is around 95% sucrose and the rest is molasses. The differences that matter are elsewhere: brown sugar is acidic, so it reacts with baking soda; it is more hygroscopic, so it makes chewier and moister bakes; and it creams badly, because the molasses coating softens the crystal edges so they cannot cut into butter.
Why did my cookies spread too much when I changed the sugar?
White sugar has a neutral pH and interferes with gluten development, so the dough stays fluid longer and spreads further before the proteins set. Brown sugar is acidic and reacts with soda, setting the structure earlier, so it spreads less and rises more. Swapping brown for white therefore reliably produces flatter, crisper cookies.
How much does a cup of sugar weigh?
Granulated white sugar is 198 g per US cup. Superfine or caster is 190 g, packed brown sugar is 213 g and confectioners’ sugar is only 113 g. That last one is the dangerous one — a cup of confectioners’ sugar is little more than half the mass of a cup of granulated, so substituting cup for cup removes 85 g.
Can I use confectioners' sugar instead of granulated?
Only where creaming is not doing the work. Confectioners’ sugar dissolves instantly and has no cutting action, so it aerates butter not at all. That is exactly why shortbread and sablés use it and get their melting, crumbly texture. Put it into a creamed cake and the batter never lightens, and the cake comes out dense.
Does sugar feed the yeast in bread?
A small amount does, and it speeds the early fermentation. But yeast produces plenty of its own sugars from flour starch, so bread does not need added sugar to rise. In quantity sugar actually slows yeast down through osmotic pressure, which is why heavily sweetened doughs such as brioche take longer and often use an osmotolerant yeast.
What temperature does sugar caramelise at?
Sucrose begins to caramelise around 320°F or 160°C. The Maillard reaction, which is a different process involving reducing sugars and amino acids, starts much lower, from roughly 285°F or 140°C. Most of the browning on a cake or cookie is Maillard rather than caramelisation, which is why milk and egg proteins matter to crust colour as much as the sugar does.
Will allulose or monk fruit behave like sugar?
Allulose is the closest of the alternatives: it browns, it provides bulk, and it is about 70% as sweet, so you need roughly 43% more by weight. Monk fruit and stevia extracts are hundreds of times sweeter and are used in milligrams, which means they supply essentially no bulk at all — they are almost always sold pre-blended with erythritol or another bulking agent for exactly that reason.
Does the type of sugar change the shelf life?
Yes, measurably. Sugar binds free water and lowers water activity, and the more hygroscopic the sugar the more strongly it does so. Bakes made with honey, molasses or brown sugar stay soft noticeably longer than the same recipe made with white sugar, because fructose holds water harder than sucrose does.
