In short: Brine strength has to be specified by weight, because a cup of salt is not a fixed quantity. One cup per US gallon gives 3.49% with Diamond Crystal, 5.07% with Morton and 7.71% with table salt — the same instruction spanning a 2.2× range, and never the 6% it is always claimed to be. Worked Example

  1. Decide which convention you are using. Wet, dry or equilibrium — their percentages are not comparable.
  2. Weigh the meat, and the water if there is any. Grams throughout; cups are a convenience at the end.
  3. Apply the percentage to the right basis. Water for wet, meat for dry, both for equilibrium.
  4. Set the time from the thickness. Diffusion goes as the square root of time.
  5. Keep it below 40°F and discard the brine after. A brine is not a preservative.

A 14 lb turkey in a 5% wet brine with 7 gallons of water needs 1,325 g of salt — which is 4.5 cups of table salt, 6.9 of Morton or 10 of Diamond Crystal. The universal advice of “one cup per gallon” would give 7 cups, landing anywhere between 3.49% and 7.71% depending entirely on which box was in the cupboard.

Three brining conventions are implemented separately because their percentages refer to different bases and are routinely confused. A wet brine takes salt as a percentage of water weight, conventionally 3% for delicate fish, 5% as a general figure and 6% for a traditional strong brine, with 10% belonging to curing rather than cooking. A dry brine takes salt as a percentage of meat weight, 1% for standard seasoning through 2% for a firm cured surface. An equilibrium brine takes a target for the whole system and uses the exact mass-balance form, salt = p times (meat + water) divided by (1 minus p), rather than the common approximation p times (meat + water), which understates by 1.2 to 2.6% because it ignores that the salt joins the system being measured. All three results are reported in grams first and converted to cups only as a convenience, using published densities of 132 g per cup for Diamond Crystal kosher, 192 for Morton coarse kosher, 256 for fine sea salt and 292 for fine table salt. Those densities are what make the universal instruction of one cup per gallon indefensible: against a US gallon of water at 3,785 g it yields 3.49%, 5.07% and 7.71% for the three main salts, and never the 6% claimed. Brining time is estimated from thickness rather than weight, since diffusion depth advances with the square root of time, and the page states the distinction explicitly because weight determines the quantity of salt while thickness determines the duration.

The familiar advice of one cup per gallon is not a fixed strength at all: it gives 7.71% with table salt, 5.07% with Morton and 3.49% with Diamond Crystal, because the crystals pack completely differently. Is one cup of kosher salt per gallon really a 6% brine?

No, and it is not 6% for any salt on the market. A US gallon of water weighs 3,785 g. A cup of Morton coarse kosher is 192 g, giving 5.07%; a cup of Diamond Crystal is 132 g, giving 3.49%. Only table salt gets near the claim, and it overshoots at 7.71%. The rule survives because most people never check it and because brining is forgiving enough to hide the error.

What is equilibrium brining?

Setting the salt as a percentage of the whole system — meat and water together — rather than of the water alone, so that when the salt has distributed evenly the meat sits at exactly your target and cannot go past it. The practical range is 1.2 to 1.8%, with 1.5% a good default. The exact formula is salt = p(m+w)/(1−p), which accounts for the salt itself joining the system.

Can you over-brine with an equilibrium brine?

You cannot overshoot the salt percentage, which is the point of the method. You can still ruin the meat in other ways: texture softens over long soaks, proteins break down, and the food-safety clock runs exactly as it always did. The common claim that you simply cannot over-brine is close enough to sound helpful and loose enough to get you into trouble. It is more forgiving on salt, not faster and not indefinite.

Wet brine or dry brine, which is better?

Dry brine for anything where you want crisp skin or good bark, at 1 to 2% of the meat weight. It seasons just as deeply, takes no refrigerator space, and dries the surface rather than wetting it, which is decisive for browning. Wet brine for lean cuts that genuinely benefit from extra retained water, at about 5% of the water weight. For a turkey, most cooks who have tried both settle on dry.

How long should I brine?

Thickness decides, not weight. A thin cutlet is done in under an hour, chops in two to four, a chicken overnight, a turkey twelve to twenty-four in a wet brine or twenty-four to forty-eight dry. Salt diffusion goes as the square root of time, so doubling the depth it must reach costs four times as long — a measured experiment found a three-inch pork loin had absorbed salt only two millimetres deep after an hour.

Does the type of salt change how much I need?

By weight, no — all pure salts are essentially the same substance and 20 g of any of them seasons identically. By volume, enormously: a cup of Diamond Crystal weighs 132 g against 292 g for table salt, a factor of 2.2. That is the entire reason brine recipes go wrong, and the entire reason to own a scale. Iodised salt can also add a faint off-flavour in long brines.

Should I rinse meat after brining?

After a strong traditional wet brine, a quick rinse and a thorough pat dry is sensible, mainly to remove excess surface salt. After a dry brine or an equilibrium brine, do not rinse — the salt has been calculated to end up in the meat and washing it off defeats the arithmetic. In every case dry the surface properly before cooking, because a wet surface steams instead of browning.

Can I reuse brine?

No. It has held raw meat, so it carries whatever bacteria were on the surface, and it has been diluted by the meat's own moisture so its strength is no longer what you calculated. Discard it. For the same reason it cannot be used as a base for gravy or sauce, however much flavour it appears to have picked up.

What temperature should meat be brined at?

At or below 40°F for the entire time, without exception. A brine at flavour concentrations is not a preservative — it is far too weak to inhibit bacteria meaningfully — so an unrefrigerated brine is simply raw meat sitting in warm salty water. If you heated the brine to dissolve the salt or steep aromatics, chill it completely before the meat goes in.
