What this result does not account for

  • Densities are typical values. Freshly ground spice is lighter than commercial powder, and the same spice varies between suppliers and with grind size.
  • How firmly a spoon is packed can change a volume measure by a fifth or more, which is precisely the error weighing eliminates.
  • The tool models four ingredients. Larger blends follow the same arithmetic but need a spreadsheet.
  • Flavour intensity is not proportional to weight. A gram of cayenne and a gram of paprika are not interchangeable, so the shares describe composition rather than impact.
  • Shelf-life guidance is indicative. Storage conditions matter more than elapsed time.

Each ingredient's contribution is converted to a common mass basis before any share is computed. When the parts are given by volume, mass is parts multiplied by the ingredient's density in grams per level teaspoon; when they are given by weight, the parts are already masses and are used directly. Weight shares are then each ingredient's mass divided by the total, and those shares are scaled to the requested batch weight. Densities are drawn from standard culinary reference values and span dried leaf herbs at approximately 1.0 g per teaspoon through to fine table salt at 6.0, a spread of more than six to one. The divergence figure is calculated by recomputing the same nominal parts on the opposite basis and reporting the largest change in any single ingredient's share, which is the most direct way to show how much the choice of basis matters for a given formula. Salt content is aggregated across all four salt varieties in the list, since a blend may contain more than one.

Computation runs in IEEE-754 double precision at full internal precision; rounding to two decimal places occurs strictly at the display layer, so no cumulative drift enters the result. All monetary outputs use accounting presentation — grouped thousands, two decimals, negatives in parentheses — so figures can be transcribed directly into a model or working paper. Division-by-zero and out-of-domain inputs return an em-dash rather than a misleading number.

Why does my spice blend taste different each time I make it

Almost always because it is measured by volume. A teaspoon of ground spice varies with how finely it was ground, how firmly it settled in the jar and how you level the spoon, and different spices vary in density by more than six to one. Weighing the ingredients removes all of that at once. Write the formula as weight percentages and the blend becomes genuinely repeatable.

Should I put salt in my spice blend

Usually not, if the blend lives in a jar. Leaving salt out lets you use as much spice as the dish wants without the salt following it, and it means the same blend works for food that was already brined or built on a salted stock. Salt the dish separately by weight. The one case for including it is a rub applied to meat, where the salt is doing a curing job as well as a seasoning one.

How long does a homemade spice blend last

Ground spices do not spoil, they fade. Expect six months to a year before a blend has lost most of its aromatics, against two to four years for the same spices left whole. Blend in small batches, store away from heat and light rather than above the hob, and date the jar. If a blend smells of nothing when you open it, no amount of it will season the food.

Does it matter which salt I use in a blend

Enormously, if you are measuring by volume. Diamond Crystal kosher salt is about 2.8 g per teaspoon and table salt about 6.0, so a spoon-measured blend made with one is more than twice as salty as the same blend made with the other. By weight the difference disappears entirely, which is the strongest practical argument for weighing.

How do I scale a spice blend up

Convert it to weight percentages first, then multiply. Percentages scale perfectly and spoon counts do not, because the packing error compounds as the batch grows and because larger spoons and scoops are not simple multiples of small ones. Once you have the blend as percentages you can make 50 g or 5 kg from the same formula.

Should I toast and grind whole spices

If you can, yes — it is the largest single improvement available to a blend, and it changes the density figures too, since freshly ground spice is fluffier than commercial powder and weighs less per spoon. Toast gently until fragrant rather than dark, cool completely before grinding, and grind only what you will use in the next few months.

What is a good all-purpose ratio to start from

A common savoury starting point is four parts paprika, two parts garlic powder, two parts dried herb and one part black pepper, by weight, with salt kept separate. From there, adjust one ingredient at a time and write down what you changed. Blends are much easier to improve incrementally than to design from scratch, and keeping notes by weight is what makes the improvement cumulative.
