  • Volume options convert at the density of water and are correct for brines and cooking water only, not for oils, syrups or flour.

In short: Professional kitchens salt by percentage of weight, never by the spoon. The core rates are 1–2% for meat, 1.8–2.2% of the flour for bread, 2–5% for vegetable ferments and only 0.5–1% for pasta water. Worked Example

  1. Identify the basis. Decide what the percentage is measured against. Bread is measured against flour. A dry brine is measured against the meat. Pasta water and fermentation brines are measured against the water. This choice matters more than the percentage.
  2. Weigh that component. In grams. If you are working from volume, water converts cleanly at 1 g per millilitre; flour and meat do not, so weigh them.
  3. Apply the rate. Multiply by the percentage and divide by one hundred. 1.5% of 1,000 g is 15 g. The arithmetic is trivial; the discipline of using it consistently is what improves the food.
  4. Convert to spoons only at the end. And only if you must. The spoon figure depends entirely on which salt is in the box, which is why the gram figure is the specification and the spoon figure is a convenience.

A 1,000 g piece of pork shoulder dry-brined at the standard 1.5% needs 15 g of salt. That is 5 1/4 teaspoons of Diamond Crystal, 3 1/8 teaspoons of Morton, or 2 1/2 teaspoons of fine table salt — three wildly different spoon measures delivering the identical seasoning. A recipe that simply said “one tablespoon” would have delivered 8.4 g, 14.4 g or 18 g depending on the cupboard, spanning under-seasoned to over-seasoned from a single instruction.

What is the correct salt ratio for cooking

There is no single ratio, because the correct rate depends on what is being salted and what the percentage is measured against. Why does the same teaspoon of salt weigh different amounts

Because bulk density varies enormously with crystal shape. Diamond Crystal kosher salt is made by a pan-evaporation process that produces hollow, flaky pyramids that pack loosely, at about 2.8 g per teaspoon. Fine table salt is dense cubic crystals that pack tightly, at about 6.0 g. Morton kosher sits between them at 4.8 g. The same nominal teaspoon therefore spans a 2.14 times range, which is more than enough to ruin a dish.

Can I substitute table salt for kosher salt one for one

Not by volume. If a recipe was written for Diamond Crystal and you use table salt at the same spoon measure, you will add roughly 2.14 times the salt. Convert by weight instead: work out the grams the recipe intends, then measure that weight of whatever salt you own. If you must work by volume, use about half as much table salt as Diamond Crystal, and about two thirds as much as Morton.

How much salt goes in bread dough

1.8 to 2.2% of the flour weight, with 2% being the standard. On 1,000 g of flour that is 20 g. Note that the percentage is against the flour alone, not the total dough weight, which is the convention throughout baker’s percentages. The only genuine remedy is dilution — increasing the quantity of unsalted components until the percentage falls back into range. Acid, fat and sweetness can mask saltiness perceptually, but the salt is still there.

Should I salt meat before or after cooking

Before, and ideally well before. Salt applied in advance draws moisture to the surface, dissolves in it and is reabsorbed as a concentrated solution, so it seasons the interior rather than sitting on the outside. Allow at least 40 minutes per 25 mm of thickness, and up to 24 hours for a large roast. Salting immediately before cooking is the worst option, because the surface is wet with undissolved brine at exactly the moment you want it dry for browning.

How do I convert a salt percentage into teaspoons

Work out the grams first, then divide by the density of your salt: 6.0 g per teaspoon for fine table salt, 5.5 for fine sea salt, 4.8 for Morton coarse kosher and 2.8 for Diamond Crystal. So 15 g of Diamond Crystal is about 5 1/4 teaspoons, while 15 g of table salt is only 2 1/2. Always do the conversion last, and treat the gram figure as the actual recipe.

Does salt percentage change when I scale a recipe up

No, and that is precisely why professionals use percentages. The rate is scale-invariant: 2% is 2% whether you are salting 500 g or 50 kg. This is the main practical advantage over spoon measures, which have to be multiplied and are prone to compounding rounding errors at large multiples. Scale the weight, apply the same percentage.

Is sea salt healthier or less salty than table salt

Neither in any meaningful sense. Both are around 97 to 99% sodium chloride, and the trace minerals in sea salt are present in quantities far too small to affect nutrition. Coarse sea salt can seem less salty spoon for spoon purely because larger crystals pack less densely, which is a measurement artefact rather than a property of the salt. Weighed gram for gram, all of them deliver the same sodium.
