What this result does not account for

  • Thickening is affected by how long the roux is cooked, since prolonged heat weakens the starch's thickening power. A dark roux thickens noticeably less than a blond one.
  • Starch behaviour varies with acidity, sugar and agitation, so a very acidic or very sweet sauce may need more thickener than the table suggests.
  • Reduction time depends on pan surface area, which is not modelled here.
  • The concentration factor applies to dissolved solids. It does not predict flavour, which changes qualitatively as well as quantitatively during a long reduction.
  • Dairy-based sauces can split if reduced hard, so the reduction model is most reliable for stock and wine based sauces.

In short: Scaling a sauce is not one calculation but two. Thickener scales with the liquid, not with the batch multiplier — a medium sauce takes about 120 g of roux per litre, which is the classic 1:8 ratio, and roux is equal weights of flour and fat. Reduction is the part that catches people. Boiling water off adds nothing and removes only water, so it multiplies every dissolved thing by the volume ratio: reducing 1,000 mL to 700 mL is a 30% reduction that concentrates salt, sugar and acid by 1.43×. A sauce seasoned to 1% salt before reducing arrives at 1.43%. Season afterwards.

Worked Example

  1. Decide the finished volume. Thickener is calculated against what you end up with, not what you start with.
  2. Work out the reduction. Starting volume divided by finished volume gives the factor everything dissolved gets multiplied by.
  3. Add thickener for the finished litres. 120 g of roux per litre for a medium sauce, half that weight in cornstarch.
  4. Season last. Because reduction has already multiplied whatever seasoning was in the pan.

A litre of stock reduced to 700 mL is a 30% reduction and a 1.43× concentration. For a medium sauce the finished 700 mL needs about 84 g of roux — 42 g of flour and 42 g of butter — or roughly 21 g of cornstarch instead. If that stock was seasoned to 1% salt at the start, it arrives at 1.43%, which reads as distinctly salty. At 60 mL a plate the finished sauce serves about 12.

Is cornstarch or flour better for thickening

They do different jobs. Cornstarch has roughly twice the thickening power by weight, so you need about half as much, and it gives a glossy, translucent finish that suits Asian sauces and fruit fillings. Flour in a cooked roux gives an opaque, matte, richer result and tolerates long simmering, whereas cornstarch can thin out if held hot too long or stirred aggressively after setting.

Why does my sauce take so long to reduce when I double it

Because evaporation happens at the surface and the surface did not change. Twice the liquid in the same pan is twice as deep, so the rate of reduction per unit of sauce is halved. What is the ratio for a béchamel

One part roux to eight parts milk by weight, so 120 g of roux — 60 g butter and 60 g flour — per litre of milk. That gives a medium sauce suitable for lasagne or a gratin. Should I season before or after reducing

After, essentially always. Reduction multiplies whatever seasoning is already present by the concentration factor, and that factor is easy to underestimate: taking a sauce down by a third is a 1.5× multiplication. Season lightly if you must for balance during cooking, then adjust properly once the sauce has reached its final volume. Use unsalted or low-salt stock for anything you plan to reduce hard.

How do I fix a sauce that is too thin

Either reduce it further, which also concentrates the flavour and the seasoning, or whisk in a beurre manié — equal weights of soft butter and raw flour kneaded to a paste — a little at a time off the boil. The second option thickens without changing the volume or the seasoning much, which makes it the better rescue when the sauce already tastes right. How much sauce per person should I make

Around 30 to 60 mL for a pan sauce served alongside a protein, about 60 mL for a gravy, and 120 mL a head for a pasta sauce where the sauce is a substantial part of the dish. Make perhaps 15% more than the arithmetic suggests: some clings to the pan, some to the spoon, and running out of sauce is a more visible failure than having a little left over.

Why did my sauce turn bitter when I reduced it

For the same reason it turned salty — reduction concentrates everything, including things you would rather it did not. Tannic wine becomes harsh, over-browned aromatics become acrid, and tomato acidity sharpens rather than sweetening. The fix is upstream: use a wine you would drink, do not let the fond catch, and taste the liquid before you commit to a long reduction rather than after.
