What this result does not account for
- Ingredient macro figures come from databases that themselves carry three to eight percent uncertainty, and natural variation in the food adds more.
- The 4-4-9 factors are population averages and overstate energy for high-fibre, high-polyol and nut-heavy dishes.
- Portion estimation is the dominant error at ten to twenty percent, and no calculator can correct for serving by eye.
- Oil left behind in the pan is counted here but not eaten, so dishes cooked in a lot of oil that is drained will be overstated.

Worked Example
- Add up the macros for the whole batch. Every ingredient, including the cooking oil, which is the one people forget.
- Apply 4, 4 and 9. Protein and carbohydrate at four calories a gram, fat at nine. That gives the batch total.
- Weigh the finished dish. Pan contents minus the pan. This single measurement is what makes a per-100-gram figure trustworthy.
- Divide by servings. And weigh the portions if consistency matters, because serving by eye varies by twenty percent or more.
A dish built from 600 g of raw chicken, 300 g of dry rice, 30 g of oil and 400 g of vegetables uses 1,330 g of ingredients and supplies about 2,490 kcal. But the chicken shrinks to roughly 438 g while the rice swells to 750 g, so the pan finishes at about 1,558 g. On the raw basis that reads as 187 kcal per 100 g; on the correct finished basis it is 160 — a 17.1% overstatement. Split four ways, each serving is 623 kcal and weighs about 390 g.

Total energy is calculated with the Atwater general factors of 4 kilocalories per gram of protein, 4 per gram of carbohydrate and 9 per gram of fat, the same basis used on nutrition labels under 21 CFR 101.9(c)(1)(i). Energy per serving divides the total by the serving count. Energy density uses the finished weight of the cooked dish rather than the sum of raw ingredient weights, because water movement during cooking changes weight without changing energy: the calculator reports the error that using the raw sum would introduce. The fibre adjustment assumes roughly a third of dietary fibre is soluble at 2 kilocalories per gram with the remainder insoluble at zero, reflecting the FAO/WHO 2003 specific factors that the FDA partially adopted in 2016. Kilojoule conversion uses 4.184 kJ per kilocalorie. The stated accuracy limits follow published analyses of portion estimation error and of Atwater factor performance, including the AJCN findings of up to 11% overestimation for low-fat high-fibre diets and 32% for almonds.
Computation runs in IEEE-754 double precision at full internal precision; rounding to two decimal places occurs strictly at the display layer, so no cumulative drift enters the result. How do you calculate calories per serving
Add the protein, carbohydrate and fat for the entire batch, multiply by 4, 4 and 9 kilocalories per gram respectively, then divide the total by the number of servings. The arithmetic is trivial; the accuracy depends entirely on whether your ingredient quantities and your serving count are honest.
Why does my dish weigh less than the ingredients I put in
Because water left during cooking. Chicken breast loses about a quarter of its weight, ground beef up to a third, and spinach more than eighty percent. The energy does not change at all — water carries no calories — so the same total energy is now packed into less weight, which makes the cooked food more calorie-dense per gram than the raw ingredients were.
Should calories per 100 g use the raw or the cooked weight
The cooked, finished weight, always, because that is what you are actually eating and weighing. Using the raw ingredient sum is a common and significant error. In a worked example with chicken and rice, the raw basis gives 187 kcal per 100 g against a correct 160 — an overstatement of 17%. Weigh the pan contents after cooking and use that figure.
Do calories change when you cook food
Essentially no. Cooking moves water and sometimes renders out fat, but it does not create or destroy meaningful energy. What changes is the calorie density per gram: cooked rice has fewer calories per gram than dry rice because it absorbed calorie-free water, and cooked chicken has more per gram than raw because it lost water. The total energy in your portion is the same either way.
Why do the macros on a label not add up to the calories
Mostly rounding. The FDA requires calories to be declared to the nearest 5 below 50 and the nearest 10 above, while grams are declared to the nearest whole gram and fat to the nearest half gram below 5 g. Multiplying the rounded grams by 4, 4 and 9 therefore rarely reproduces the rounded calorie figure. The FDA said so explicitly in its 2016 rulemaking. Manufacturers may also use food-specific factors rather than 4-4-9.
Are the 4-4-9 calorie factors accurate
They are rounded population averages from experiments conducted between 1887 and 1902, not physical constants. Atwater's own computed values were roughly 4.35, 4.1 and 9.4. FAO and WHO concluded in 2003 that the general factors carry systematic errors of five to ten percent for many food categories. For a standard mixed diet the error is around three to five percent; for high-fibre or nut-heavy diets it can exceed twelve, and measured directly almonds supply thirty two percent less than predicted.
Does fibre have calories
Less than the general factors assume. Insoluble fibre supplies essentially none because it passes through undigested, and soluble fibre supplies about two calories a gram because gut bacteria ferment it into short-chain fatty acids. The 4-4-9 shorthand charges all carbohydrate at four, so high-fibre foods are systematically overstated. The FDA adopted specific fibre factors in 2016 but left protein and fat unchanged.
How accurate is a home calorie calculation
Less accurate than the decimal places suggest, and the dominant errors are not the ones people worry about. Portion estimation carries ten to twenty percent, database matching three to eight, and natural variation in the food itself several more. The choice of conversion factors is a second-order concern by comparison. Treat any mixed-dish figure as plus or minus five percent at best, and use it for consistency over time rather than precision on any single meal.
How do I convert calories to kilojoules
Multiply by 4.184. A 623 kcal serving is about 2,607 kJ. Kilojoules are the standard energy unit in Australia, New Zealand and much of Europe. It is also worth knowing that the food label "calorie" is really a kilocalorie — a thousand of the calories used in physics — which is a naming collision that has caused confusion for over a century.
Should I count the oil I cook with
Yes, and it is the single most commonly omitted ingredient. A tablespoon of oil is about 14 g and roughly 120 calories, so two tablespoons in a pan adds 240 to a dish and can be a tenth of its total energy. Oil absorbed into food stays in the food. Oil left in the pan does not, which is one of the few genuine reasons a home calculation can legitimately overstate what you ate.
