What this result does not account for

  • The evaporation allowance is the least transferable figure here. It depends on pan diameter, lid fit and simmer intensity, and a wide thin pan on a fierce flame can easily lose double the default.
  • Absorption figures are typical for each variety. Age matters: older rice has dried further and absorbs somewhat more than a freshly harvested crop.
  • Weight conversion assumes 185 g per cup of raw long grain. Short grain and arborio pack more densely and run slightly heavier per cup.
  • Risotto and pilaf are not absorption cooking in this sense. Risotto is cooked with staged additions and constant agitation, and its water requirement is not a single figure.

In short: The usual advice of a fixed ratio is wrong at scale. Rice absorbs roughly its own volume in water, but the extra water is evaporation — about a quarter of a cup per pot, whatever the batch size. So water = absorption + a constant, not rice × 1.25. At one cup the two agree exactly; at six cups the fixed ratio adds 1.25 surplus cups and gives you mush.

Worked Example

  1. Measure the rice. By volume or weight, either is fine, at roughly 185 g per US cup of raw long grain.
  2. Multiply by the absorption. One to one for white rice, about two to one for brown, three to one for wild. This is the part of the water that scales with the batch.
  3. Add the evaporation allowance once. Not once per cup — once per pot. A quarter cup suits a standard 20 cm pan with a good lid. This is the step that keeps large batches correct.
  4. Simmer covered, then rest. Lowest possible heat, lid on, no stirring, then ten minutes off the heat still covered so the moisture equalises.

Six cups of white long grain rice. The memorised 1.25 ratio says 7.5 cups of water. The absorption-plus-evaporation model says 6 cups absorbed plus a quarter cup of steam, which is 6.25 cups — 1.25 cups less. That surplus in the fixed rule has nowhere to go but into the grains, which is why a recipe that worked perfectly at one cup produces soft, claggy rice when scaled to six. At one cup the two methods give exactly the same answer, which is precisely why the flawed rule feels trustworthy.

Water is modelled as absorption plus evaporation rather than as a fixed ratio, following the observation that grain absorption scales with the quantity of rice while steam loss is a property of the pan, the lid and the cooking time. Absorption figures are volumes of water per volume of raw rice, and they are absorption only: 1.0 for white long grain and basmati, 0.90 for medium grain and jasmine, 0.85 for short grain, 1.75 for brown long grain and parboiled, 1.85 for brown short grain, and 2.75 for wild and arborio. There is no single correct ratio, and that is the central point. Does the knuckle method actually work

Yes, and for a sound reason. Resting a fingertip on the levelled rice and filling to the first joint sets a constant depth of water above the bed, and a constant depth over a fixed pan diameter is a constant volume — which is exactly the evaporation term the model calls for. That is why it works at any batch size. Its weakness is precision rather than principle: testing has found that natural variation in finger length moves the added water by more than three quarters of a cup, against a target of about a quarter.

How much water does brown rice need

Roughly twice what white rice needs — about 2 cups of water per cup of rice for long grain brown, plus the same quarter cup evaporation allowance. The bran layer has to be fully hydrated before the starch inside can gelatinise, which is also why brown rice takes 40 to 50 minutes rather than 15 to 18. Using a white rice ratio on brown rice is the most common cause of crunchy, undercooked results.

Should I rinse rice before cooking

For most long grain and basmati, yes. Rinsing removes surface starch that would otherwise gelatinise and glue the grains together, and it is essential for basmati and jasmine where separate grains are the point. Rinsed rice carries a little surface water into the pot, which slightly reduces what you need to add. Do not rinse risotto rice — that surface starch is what makes the dish creamy.

How much water in a rice cooker
