What this result does not account for

  • Dilution is a preparation-dependent estimate. Ice temperature, ice size, shaking vigour and duration all change the real figure, which is why Arnold recommends weighing a test drink.
  • The tool models three alcoholic components and one non-alcoholic aggregate. More complex builds need the same arithmetic applied twice.
  • Volume contraction between alcohol and water is not applied here; at the strengths cocktails reach the effect is below the precision of the dilution estimate itself. The dilution calculator covers it.
  • Standard drink figures describe the contents of the glass, not their effect on any individual.
  • Sugar and acid content are not modelled, though both change how strong a drink tastes at a given ABV.

In short: A batched cocktail is missing an ingredient: water. Shaking or stirring a drink over ice adds a great deal of it, and a bottle poured straight does not. So you add it deliberately — but read the percentage carefully, because sources use two different denominators. Dave Arnold's measured Negroni goes from 90 mL of mix to 127.3 mL finished: that same 37.3 mL of water is 41.4% of the starting volume or 29.3% of the finished drink. Two numbers, twelve points apart, one drink. This calculator works in percent of the starting volume and shows you the other figure alongside.

Worked Example

  1. Total the recipe. Per-drink volume multiplied by servings gives the mix before water.
  2. Choose a dilution and note its basis. Percent of the starting volume here. Arnold's measured figures run well above the bar rule.
  3. Add the water. Then chill the whole batch hard before service.
  4. Check the strength. Batch ABV falls by roughly the dilution, and tells you what a serving actually contains.

A Negroni is 30 mL each of gin, Campari and sweet vermouth. Twenty of them is 1,800 mL of mix; at 25% of the starting volume that is 450 mL of water for a 2,250 mL batch — exactly three 750 mL bottles, at 112.5 mL a serve. The 480 mL of pure alcohol takes it from 26.7% ABV undiluted to 21.3% batched, so each serving carries about 18.9 g of ethanol: 1.35 US standard drinks, or 2.4 UK units.

The mix volume is the per-drink volume multiplied by the number of servings. Dilution water is applied as a percentage of that starting volume, and the tool states this convention explicitly because published figures use two incompatible denominators without distinguishing them. The equivalent share of the finished drink is reported alongside, calculated as d divided by 100 plus d. Dilution presets cover both the common bar rule of 20 to 25% and the substantially wetter figures Dave Arnold obtained by weighing drinks before and after preparation for Liquid Intelligence, namely 24% for built drinks, 45% stirred, 55% shaken and 90% blended. These differ from the bar rule even after both are placed on the same denominator, so both are offered rather than averaged. Batch strength is the total pure alcohol, being each component's volume multiplied by its stated ABV, divided by the total finished volume. Standard drink counts use the US definition of 14 g of ethanol and the UK definition of 10 mL, converting volume to mass at an ethanol density of 0.789 g/mL.

Computation runs in IEEE-754 double precision at full internal precision; rounding to two decimal places occurs strictly at the display layer, so no cumulative drift enters the result. All monetary outputs use accounting presentation — grouped thousands, two decimals, negatives in parentheses — so figures can be transcribed directly into a model or working paper. Division-by-zero and out-of-domain inputs return an em-dash rather than a misleading number.

How much water should I add to a batched cocktail

That is exactly the question, and it changes the answer by about a third. Arnold's Negroni takes 37.3 mL of water into 90 mL of mix to finish at 127.3 mL. As a share of the starting volume that is 41.4%; as a share of the finished drink it is 29.3%. Why does a batched cocktail taste wrong without added water

Because water is a real ingredient, not an accident. Shaking or stirring over ice chills the drink and melts a substantial amount of it into the glass at the same time; Arnold's point is that there is no chilling without dilution. A batch poured straight from a bottle has had neither, so it arrives warm and harsh, with the alcohol dominating flavours that should be in balance.

Can I batch cocktails with citrus juice

Yes, but not far ahead. Fresh citrus starts to lose its brightness within hours and turns dull and slightly bitter within a day or two, so a shaken sour is best batched the morning of service and kept cold. Spirit-only batches such as a Negroni or Manhattan are the opposite case and will keep for weeks refrigerated, sometimes improving as they marry.

Should I add soda or tonic to the batch

Never. Carbonation will not survive storage, and you will end up with a flat batch and a good chance of a pressurised mess. Batch only the still components, chill them hard, then top each glass with the fizzy element at the moment of service. The same applies to sparkling wine in a spritz.

How strong is a batched cocktail

Take the pure alcohol from each spirit — its volume multiplied by its ABV — add those together, and divide by the total batch volume including the water. A Negroni batched at 25% dilution comes out around 21% ABV against 26.7% undiluted. That is still roughly three times the strength of a beer by volume, so a modest-looking 112 mL serving is about 1.35 US standard drinks.

How far ahead can I batch a cocktail

Spirit-only batches can be made weeks in advance and kept refrigerated, and many people think a Manhattan or Negroni is better for a few days of marrying. Anything with citrus should be same-day. Anything with dairy, egg or cream is best made to order. Add the dilution water when you batch rather than at service, so the drink has time to integrate.

Do I need to chill a batch or is ice enough

Chill it. The reason a batched drink works is that it arrives already cold and already diluted, so the ice in the glass has almost nothing left to do and the drink holds its balance instead of watering down while somebody talks. A batch poured warm over ice will over-dilute within minutes and defeat the entire exercise.

What size should each serving be

Divide the finished batch by the number of servings and you have it. A Negroni batched at 25% gives 112.5 mL a serve, which suits a rocks glass with a large cube. Spirit-forward drinks served up are usually 90 to 130 mL, and longer drinks 150 to 250 mL once the mixer is added at the glass. Measure the first pour so the rest are consistent.

Is a standard drink the same everywhere

No, which is why this page gives two figures. A US standard drink is 14 g of ethanol, while a UK unit is 10 mL, which works out at about 7.9 g. The same glass is therefore about 1.35 US standard drinks or 2.4 UK units. Both are measures of what is in the drink rather than of its effect on a person, which depends on body mass, sex, food and time.
