In short: There are two correct methods and they answer different questions. Scale by base area when the pans are the same depth — it holds the batter depth constant, so the bake barely changes. Scale by capacity for Bundt, tube and loaf pans, where depth changes and the bake must change with it. The most useful fact in the table: a 9-inch round and an 8-inch square are within 0.6% of each other, so they swap with no adjustment at all.

Worked Example

  1. Measure both pans across the base. Inside edge to inside edge, since pan walls slope.
  2. Decide which question you are asking. Same depth means area; different depth means capacity.
  3. Divide new by original. That ratio is the multiplier for every ingredient.
  4. Check what happened to the depth. Deeper needs longer and cooler; shallower needs checking early.
  5. Fill no more than two thirds. The rest of the pan is the space the cake rises into.

A recipe written for a 9-inch round moved to an 8-inch square needs a factor of 1.006 — that is, no change at all, since the two pans are 63.62 and 64 square inches. Moved instead to a 9x13, the factor is 1.84, and the batter sits shallower, so start checking about 20% earlier. The 9-inch round holds 8.8 cups to the brim but only 5.9 at the standard two-thirds fill, which is why published charts quote it as anything from 6 to 8.8 cups.

The base-area ratio divides the footprint of the target pan by that of the source and holds batter depth constant, which is correct whenever the pans are of comparable depth and which preserves the bake time. The capacity ratio divides brim volumes and is correct for pans of differing wall height — Bundt, tube and loaf — where the batter depth necessarily changes and the bake must be adjusted with it. How do I convert a cake recipe to a different pan size?
